This principle guides Our Five Key Actions, which form the basis for our sustainability programme:

Source with care

Use local and British producers to reduce food miles

Seek products that meet verified ethical standards; Fairtrade, Rainforest Alliance, Food Standards Assured Red Tractor, Leaf Mark, Freedom Foods

Alternatively, source from brands with well-documented ethical supply chains and sustainability policies

Value real partnerships

Work closely with suppliers and stakeholders to improve sourcing and build sustainable supply chains and complete traceability of products

Educate

Train every team member in the importance of sustainable business practice and continue to research the latest advice on best practice

Welcome creative ideas from everyone to promote environmental awareness and best practice

Test and refine

Return regularly to existing policies to examine areas for improvement

Audit company performance on key sustainability measures such as food waste and sourcing to make sure policy effectively leads to best practice

Meet and exceed industry standards

We'll continue to build on our existing sustainability efforts by seeking certification through bodies committed to promoting more sustainable practices. For example:

One star from the Sustainable Restaurant Association with the aim to gain our second this year.
